IN THE KITCHEN WITH NINA Living and working on the farm and being married to a river guide meant that I always had plenty of hungry people around. Over the years, I've been fortunate enough to collect lots of recipes that everyone seems to like. Some of my favorite recipes are the ones that we used on the river trips. Shore lunch is one of the most special parts of a fishing trip and these hushpuppies were always a hit. These are best fried where you have fried your day's catch of fish. I used to mix these up and send them with the guides to make on the gravel bar with their fisherman. HUSHPUPPIES 1 1/2 cups cornmeal 1/4 cup plain flour 2 1/2 teaspoons baking powder 3/4 teaspoon salt 1/2 cup finely chopped onion 1 egg 3/4 up milk (or water) Stir ingredients together and add 3/4Cup milk (or water). Mix until smooth. Drop by tablespoons into hot grease, fry until brown. Drain on paper towels.
